Demonstration of the cheese making process in Cignale farmhouse

A very special day dedicated to the cheese. The Macrini farm showed us how its production takes place. The laboratory is located in Montebello di Bertona. Their owners use their own milk and pork rennet only. in the demonstration held for our guests in our agriturismo, the first salt cheese (primo sale) was prepared and then the ricotta that our guests were able to taste immediately.  then were  showed how the dough is put into the typical basket molds.
